Almond Crusted Salmon Fillet

Ingredients
4 skinless, salmon fillets ( 200g / fillet)
1 ½ tablespoon of maple syrup (you may substitute honey)
1 lemon, juiced
½ cup almond meal, almond flour or finely ground almonds
Salt & pepper, to taste
1 pinch of Cayenne pepper
2 tablespoons of extra virgin olive oil
Method
Step 1: First thing we're going to do is preheat our oven to 350 degrees Fahrenheit (180 Celsius).
Next, in a medium bowl we're going to place our 4 fillets and marinate in maple syrup, lemon juice,
salt and pepper.
Step 2: In a shallow bowl or edged plate, we're going to place our almond meal, some salt, pepper,
and our cayenne and give it a mix till combined. We then take our fillets, one at a time and coat
them in the almond meal mixture. We can do this by taking 1 fillet at a time and placing it into the
almond meal mixture, pressing down onto the fish to ensure the crust is packed in tightly (make
sure you save any of the leftover marinade, we can use it as a sauce for the fish). Once all the fish is
coated, we can get a large pan on medium-high heat with our olive oil. Add the fish into the pan and
cook on each side for 3-5 minutes or until golden brown and then place them into the oven for
another 10 minutes to complete cooking and browning.
Step 3: The final step is to set the oven to broil at 425 degrees Fahrenheit (220 Celsius) setting
(broiling cooks the food only from the top), this is to get a little more color on the crust and to make
it a little more crispy. Once done we can pull them out of the oven and drizzle a little bit of the
leftover marinade on top and they're ready to serve.
